I love Jicama!! This is one of my favourite salads– super easy, light, fresh & yummy!
Jicama Salad:
1/2 Large Jicama
1/2 Cucumber
1/2 Red or Yellow Bell Pepper
1/4 to 1/2 Red Onion
1 Lime (juice of)
1 to 2 tsp Olive Oil
pinches of salt & pepper to taste
— dice all ingredients, mix olive oil & lime juice into salad, add a few pinches of salt & pepper. Enjoy!
